Members of the public will go head to head with local butchers, restaurateurs and hoteliers when they bid for prime grain and grass-fed steers.
Much like the auctions at the Sydney Royal Easter Show, local business purchasers will by vying for the blue ribbon cattle.
A steer that has won its class in show, will be displayed at the auction with a blue ribbon, the holy grail of the cattle purchasing elite.
Once purchased the blue ribbon can be proudly displayed at the new owner's business premises - often a restaurant or butchers shop - and the hungry public know that a top quality feed beckons.
"It's a win-win situation for farmers, purchasers and end consumers," said Charlie Cassels of the Wingham Beef Week committee.
Only introduced last year, the live cattle auction attracted 142 head of steer and purchasers and farmers came out on top.
"These days with consumers wanting more transparency and control over their food, auctions like these are a fantastic opportunity to ensure product quality and real value for money.
"The process has also been extremely successful in obtaining better returns for the steer vendors," Charlie said.
"Purchased steers can be processed at the Wingham Beef Exports abattoir and then sent on to the client's nominated butcher to be broken up in any form they wish."
