The feature producers for the market this month are Peter Jeffrey and Anke Peeters with cheese business ‘Comboyne Culture’.

Peter and Anke sell a variety of cheeses made in a small factory in Comboyne.

Peter makes them all by hand, there is no machinery involved!

They are relative newcomers, having only owned the business for two months.

Last year, having both found themselves out of work with the closure of United and Taree Community College, Peter started joking about converting their backyard pool into a cheese cellar and indulging their love of the aged dairy by starting their own business.

A friend got wind of this who knew of a local cheese business for sale, and the rest is history.

Comboyne Culture has been operating since 2006.

Peter worked alongside the previous owner for months to decide if it was the right step to buy the business, and to learn the process.

He is passionate about maintaining quality and continuing the cheese varieties, and hopes to add to them in the future.

Their varieties include Lindsay Blue with the strong blue cheese flavour; Bluembert which is half way between a blue and a camembert; the classic Camembert; very popular Washed Rind, which is camembert washed with beer; and wheel-style Aged Blue.

They say their product is “as close to organic as it can be”, using no preservatives, stabilisers or other additives.

They source all their milk locally from Sungrow Dairy, which is part of the Hastings Dairy Co-op.

Beer for the Washed Rind is from Black Duck boutique brewery in Port Macquarie.

They love having the market stall, chatting to their customers about a product they are passionate about and getting immediate feedback. For Anke it also reminds her of her Dutch heritage, and is something she always wanted to do.

You can find them at the Wingham Farmers’ Market this Saturday and sample their range.

At the markets there will also be a range of other delicious, fresh seasonal produce and lots of other products including the perfect cheese accompaniment, wine.

The Wingham Farmers’ Market is on this Saturday from 8 am till midday at the Wingham Showground.

New stallholders are always welcome, with site fees waived at your first market.
